Mom and I cooked today. I'm so sick of cutting chicken. :p Oh, and separating eggs. But we got lots done!
People have asked about some of these recipes - here are the three I've been working on.
Chicken with Fruit
To the Queen’s Taste
Serves 4
½ cup dry white wine
½ tsp cinnamon
1/8 tsp mace
½ cup raisins
½ cup dates
2 ½ pounds of chicken (breasts and thighs)
½ tsp salt
1 tbsp butter, cut into small pieces
1 tbsp brown sugar
- in a large bowl, mix wine and spices
- add dry fruits, stir and let stand for 15 minutes
- toss chicken pieces in wine and fruits, sprinkling with salt as you mix.
- place mixture in casserole dish and dot with butter
- cover and bake for 45 minutes at 350 degrees
- uncover and sprinkle with brown sugar
- bake uncovered for an additional 15 minutes or until chicken is done.
Cheese Puffs
Eating Shakespeare
Makes about 20-25 puffs
¾ cup ricotta cheese
1/3 cup all purpose flour
3 egg yolks
1 egg white
1 tsp nutmeg
topping:
1 tbsp water
¼ cup sugar
- mix first five ingredients until smooth
- drop spoonfuls of batter onto a prepared cookie sheet, preferably lined with silicone paper
- bake in the oven at 350 degrees for 15 to 20 minutes
- when the puffs have risen, brush them with water and sprinkle with sugar, then return to oven until golden
Ember Day Tart
Pastry shell
6 eggs
½ medium onion, coarsely chopped
½ cup soft cheese, grated
4 tbsp butter, melted
½ cup raisins or currants
1 tbsp sugar
sage
parsley
mint
pouder douce (3 tbsp ginger, 2 tbsp sugar, ½ tbsp cinnamon, 1 tsp cloves, 1 tsp nutmeg)
salt
saffron
- grind saffron, mix with butter and set aside
- parboil onions and fresh herbs and drain
- finely chop herbs
- beat eggs and combine with saffron-butter, onions and remaining ingredients
- pour into pastry shell and bake at 350 degrees for 1 hour
