My first attempt at brewing! Thanks to [livejournal.com profile] jackoutofthebox for putting up with my calls for stupid questions. Hopefully, at GNEW, there will be Killian's courtesy of the Scorned Lady!

(and no, I can't flip it sideways and I don't know why!)

Is the beer speaking to you? When I have brewed each burple and bubble and hiccup from the container has been babies first words to me..... oh and well don't ask Kathy and Beth regarding how we got to the bottom and there was salvageable left that I tried to drink like a beer bong during Greek week!

It did for about 2 days, then I thought I killed it. But it tasted yummy tonight!

With beer it's not such a big deal but if you ever brew wine or mead, you won't want such a big airspace like that. Either top off with a fruit juice (no preservatives) or more sugar water to bring it closer to the neck.
Beer's ok though, pretty quick you'll get that rich foamy head raft building up in that space and it will save you a lot of floor cleaning later on. You may want to put a towel or a bucket underneath the carboy if you can. Otherwise, looking forward to tasting!!! yum.
